Fatty acids, triglycerides, amino acids, sugars, steroids [1] CH3... 

The taste of various amino acids, sugars, and aliphatic nitro compounds was studied, and it was concluded that the distance over which this hydrogen atom migrates, to give a second tautomeric form, determines the sweetness. In the case of saccharin, the sweetness was explained as due to two tautomeric forms. 

In addition to the passive diffusional processes over lipid membranes or between cells, substances can be transferred through the lipid phase of biological membranes through specialized systems, i.e., active transport and facilitated diffusion. It should be borne in mind, however, that enzyme proteins, like other proteins, are dipolar ionic structures surrounded by an intense electrostatic field. Several companies are meanwhile supplying labeled amino acid/sugar mixtures of acceptable quality. However, especially if larger-scale or repeated preparations of labeled proteins are envisaged, investment of some extra time for the in-house production of labeled complex growth media for E. coli or other host cells clearly becomes advantageous, especially from the point of view of financial considerations.
