Under epimerization conditions, omerwise known as balance conditions, dissolving specific concentrations of, for example, a-D-glucopyranose alone will create an equilibrium between me two stereoisomers. Each one is a diastereoisomer of me omer a and /S). These two epimers of D-glucopyranose (Figure 3.4) have different physical and chemical properties, including meir optical activity, assessed by measuring me optical rotation wim a polarimeter.
